Tofu is a low-fat source of protein that can be transformed into flavorful dishes. We are excited to share this pumpkin curry recipe with you.
Mori-Nu Silken Tofu’s packaging allows for a long shelf life without preservatives or refrigeration. This low-fat vegetarian protein is an excellent alternative to eggs, dairy, and meat. Silken tofu can be grilled, stir-fried, sautéed or made into your favorite curry recipe. Last year, we made a delicious Red Curry with Mori-Nu Silken Tofu.
This tofu is dairy-free, gluten-free and preservative-free. It is also available in a variety of textures.
We prepared a slow cooked pumpkin curry with Mori-Nu Silken Tofu. The slow cooker is an easy way to create flavorful dishes without being in the kitchen all day. Simply prep the ingredients, place them into the slow cooker and slow cook for four hours. After four hours, serve in a bowl, add the garnishes and quinoa. The final dish is hearty and flavorful, and you won’t even realize it’s meatless.
Pumpkin Curry with Mori-Nu Silken Tofu
Ingredients
- 1 tbsp Olive oil
- ½ cup Diced onion
- 1 box Mori-Nu Silken Tofu
- 4 cups Broccoli florets
- ½ cup Diced carrot (8 baby carrots)
- 1 15 ounce Can pumpkin puree
- 1 13.5 ounce Can coconut milk
- 1 tbsp Ginger garlic paste
- 1 tbsp Curry powder
- 1 tsp Salt
- ½ tsp Cayenne
- 1 tsp Cinnamon
- Lime wedges
- Cilantro
- 1 cup Quinoa
Instructions
- Press and drain Mori-Nu Silken Tofu.
- Heat slow cooker and add olive oil, stir in onion, Mori-Nu Silken Tofu, carrot, broccoli, ginger garlic paste, coconut milk, pumpkin, curry powder, cinnamon, cayenne, salt and pepper.
- Slow cook for four hours,
- Serve in a bowl and squeeze fresh lime.
- Top with cilantro, quinoa and lime wedges.
This pumpkin curry is perfect for fall and winter days. You can substitute the quinoa for white or brown rice.
