Autumn Butterboard

Ingredients
  

  • 1 large butternut squash
  • 6 ounces goat cheese
  • 1/2 tsp salt
  • 1/3 cup crushed candied walnuts
  • 1/4 cup chopped parsley
  • 1/3 cup pomegranate seeds
  • 2 tbsp hot honey
  • olive oil

Method
 

  1. Preheat oven to 400F
  2. Brush squash with olive oil. Place squash flesh side down onto a parchment lined baking sheet and roast for 35 minutes
  3. Add squash and goat cheese to a food process and blend until smooth
  4. Spread the mixture onto a board and top with parsley, nuts, pomegranate seeds and hot honey
  5. Serve with bread and crackers
