Ingredients
  

Tomato Sauce
  • 2 Tbsp Olive Oil
  • 1 Medium Onion
  • 5 Cloves Garlic
  • 1 Tsp Oregano
  • 1 Tsp Basil
  • 3 Tbsp Tomato Paste
  • 1 28-Oz Can Crushed Tomatoes
  • 1 Bay Leaf
  • 1 Tsp Red Chili Flakes
  • 1 Tsp Salt
Chicken
  • 1 Lb Chicken Breast
  • 1/2 Cup Panko Bread Crumbs
  • 1/4 Cup Shredded Parmesan
  • 1 Egg
Chicken Parm Slider
  • King’s Hawaiian R Original Hawaiian Sweet Rolls
  • Grillo’s Pickles Dill Spears
  • Grillo’s Pickles Dill Chips
  • Sliced Mozzarella

Method
 

Tomato Sauce
  1. Heat oil in large pot
  2. Chop onions & add to pot
  3. Mince garlic & add to pot after onions are glossy, 5 minutes
  4. Add oregano & basil after 2 minutes
  5. Add tomato paste and cook, stirring, until paste has softened & blended with oil for 3 minutes
  6. Add crushed tomatoes, stir & then add bay leaf, red chili flakes & salt & cook for 20 minutes
  7. Disgard bayleaf
Chicken
  1. Combine panko & Parmesan
  2. Beat egg
  3. Place chicken in a Ziplock bag & pound with meat mallet to 1/2 inch thickness
  4. Dip chicken in egg & then panko and parm mixture
  5. Bake chicken in oven at 400°F for 15 minutes on each slide
Make Sliders
  1. Use a bread knife to slice the sliders
  2. Add mozzarella to roll bottoms then add sauce
  3. Add chicken, more sauce, more mozzarella & roll tops
  4. Bake at 400°F for 20 minutes until cheese has melted (cover top with aluminum foil to prevent over browning)
  5. Add pickle chips on top of the chicken Parmesan sliders and pickles on the side
