Method
Tomato Sauce
- Heat oil in large pot
- Chop onions & add to pot
- Mince garlic & add to pot after onions are glossy, 5 minutes
- Add oregano & basil after 2 minutes
- Add tomato paste and cook, stirring, until paste has softened & blended with oil for 3 minutes
- Add crushed tomatoes, stir & then add bay leaf, red chili flakes & salt & cook for 20 minutes
- Disgard bayleaf
Chicken
- Combine panko & Parmesan
- Beat egg
- Place chicken in a Ziplock bag & pound with meat mallet to 1/2 inch thickness
- Dip chicken in egg & then panko and parm mixture
- Bake chicken in oven at 400°F for 15 minutes on each slide
Make Sliders
- Use a bread knife to slice the sliders
- Add mozzarella to roll bottoms then add sauce
- Add chicken, more sauce, more mozzarella & roll tops
- Bake at 400°F for 20 minutes until cheese has melted (cover top with aluminum foil to prevent over browning)
- Add pickle chips on top of the chicken Parmesan sliders and pickles on the side
