Halloween Brownies with Black Beans and Protein Powder

Lighter, Flourless Brownies in Halloween Shapes

Ingredients
  

  • 1 can 19 oz black beans drained
  • 1/3 cup cocoa powder
  • 1/2 cup chocolate protein powder
  • 1/4 cup almond milk
  • 1 egg
  • 1/4 cup olive oil
  • 1/3 cup coconut palm sugar
  • 1 tsp baking powder
  • 1/3 cup dark chocolate chips
  • 1 pinch kosher salt
  • 1/4 cup chocolate chips
  • 2 tbsp butter
  • 1/2 cup confectioner’s sugar
  • 2 tbsp water

Method
 

  1. Preheat oven to 350F
  2. Grease coffins with olive oil
  3. Add black beans, protein powder, almond milk, egg, olive oil and coconut palm sugar to a blender until smooth.
  4. Pour the batter into coffins.
  5. Sprinkle chocolate chips on top.
  6. Make glaze by heating the butter on a skillet.
  7. Bake for 20 minutes.
  8. Melt chocolate and add chocolate and water.
  9. Stir until glaze is smooth.
  10. Pour glaze on top of brownies.
  11. Add confectionary sugar with sieve.
  12. Add Halloween chocolates.
