Strawberry Purée
- Cook the Strawberries: In a saucepan, combine strawberries, water, sugar, salt, and lemon juice. Cook over medium heat, stirring occasionally.
- Soften the Berries: Let the mixture cook until the strawberries are soft enough to crush with a spoon (around 10-15 minutes).
- Blend the Purée: If using an immersion blender, blend the mixture directly in the saucepan until smooth. If using a traditional blender, blend in batches until completely puréed.
- Cool & Store: Allow the purée to cool. Use what you need for the cocktail and store the rest in the fridge for later.
Lillet Spritz
- Chill Your Glass: Chill your favorite wine glass or coupe in the freezer for a frosty finish.
- Mix the Base: In a shaker, combine 2 oz Lillet Rosé and 4 oz Rosé Champagne.
- Add the Purée: Pour in 0.5 oz of the freshly made strawberry purée.
- Shake Gently: Add ice and shake gently to combine without losing the champagne’s bubbles.
- Strain and Serve: Strain the cocktail into your chilled glass.
- Garnish: Top with strawberry hearts and fresh mint for a stylish finish.
