Ingredients
  

Strawberry Purée
  • 1 lb Strawberries hulled and sliced
  • 1/4 cup Water
  • 1/4 cup Sugar
  • 1 teaspoon Lemon Juice
Lillet Spritz
  • 2 oz Lillet Rosé
  • 4 oz Rosé Champagne
  • 0.5 oz Strawberry Purée
  • Garnishes: Strawberry hearts fresh mint

Method
 

Strawberry Purée
  1. Cook the Strawberries: In a saucepan, combine strawberries, water, sugar, salt, and lemon juice. Cook over medium heat, stirring occasionally.
  2. Soften the Berries: Let the mixture cook until the strawberries are soft enough to crush with a spoon (around 10-15 minutes).
  3. Blend the Purée: If using an immersion blender, blend the mixture directly in the saucepan until smooth. If using a traditional blender, blend in batches until completely puréed.
  4. Cool & Store: Allow the purée to cool. Use what you need for the cocktail and store the rest in the fridge for later.
Lillet Spritz
  1. Chill Your Glass: Chill your favorite wine glass or coupe in the freezer for a frosty finish.
  2. Mix the Base: In a shaker, combine 2 oz Lillet Rosé and 4 oz Rosé Champagne.
  3. Add the Purée: Pour in 0.5 oz of the freshly made strawberry purée.
  4. Shake Gently: Add ice and shake gently to combine without losing the champagne’s bubbles.
  5. Strain and Serve: Strain the cocktail into your chilled glass.
  6. Garnish: Top with strawberry hearts and fresh mint for a stylish finish.
