Sweet Potato Cream Cheese Bars

Ingredients
  

Cake Mix
  • 2 1/2 Cups Flour
  • 2 Cups Sugar
  • 3 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Cup Pecans
Filling
  • 1/2 Cup Cold Butter
  • 8 Oz Cream Cheese Softened
  • 1/2 Cup Sugar
  • 3 Eggs Room Temperature
  • 1 Can 14 Oz Sweetened Condensed Milk
  • 3 Cups Cooked and Mashed Sweet Potatoes
  • 2 Tsp Pumpkin Pie Spice

Method
 

  1. To make the cake mix, combine the flour, sugar, baking powder and salt and mix well
  2. Preheat oven to 350°
  3. Combine cake mix and chopped pecans; add butter until crumbly
  4. Press mixture onto bottom of a greased 13x9-in. baking dish
  5. Beat cream cheese, sugar, 1 egg and 2 tablespoons milk until smooth; set aside
  6. Stir together sweet potatoes, remaining eggs, remaining milk and pie spice; pour over pecan mixture. Dollop cream cheese mixture over sweet potato mixture. Cut through cream cheese mixture with a knife to swirl into sweet potato mixture
  7. Bake until set and slightly golden on top, about 45 minutes. Allow to cool completely; chill before cutting into bars.
