We served these while we were still preparing the the next two appetizers.

These golden muffins are a harmonious fusion of sweet corn, tangy jalapeños, and savory cheddar cheese. The soft, crumbly texture had your guests reaching for seconds, so we made two batches and sent guests home with leftover muffins. We were running short on time, so we didn’t de-seed the Jalapeños and let’s just say the jam was spicy, with a strong aftertaste. Don’t go too crazy if you can’t handle the heat (or deseed the Jalapeños). We liked it spicy though.
