Happy Easter everyone! We hope your weekend was as fun as ours! We dyed Easter eggs, hunted for Easter eggs TWICE, and made an EASTER BASKET CAKE!
On Saturday, we started the day with an exciting Easter egg hunt. Dylan and Keira eagerly grabbed as many eggs as possible and placed them in their Pottery Barn baskets. After the egg hunt, the children played on the swings, bounced on the trampoline and climbed in the playhouse.
Later that afternoon, Dylan and Keira with the assistance of mommy, decorated Easter eggs. The kiddos were excited to carefully dip the hard boiled eggs into the colored water and decorate them with adorable stickers. Kanchana helped them write the names of our family on the eggs. Dylan left the Easter bunny a carrot, cheese and some crackers.
Easter Sunday started with opening presents from the Easter Bunny! Then we were off to another Easter egg hunt at the country club. Dylan and Keira also met the Easter Bunny. The balloon artist created a pink balloon bunny for Keira and balloon jet pack for Dylan. Brunch was DELICIOUS. We enjoyed waffles, french toast, scrambled eggs, eggs Benedict, potatoes, ravioli and mac and cheese. It was such a fun afternoon!
Easter dinner is a big deal for our brother-in-law, Brian. Our sister created her beautiful dinner table using floral plates from Villeroy and Bach, elegant white linens, white Crate and Barrel napkin rings and Williams Sonoma’s adorable egg shaped placecard holders. Brian is quite the chef and every year, we look forward to his delicious holiday meals. This Easter, we enjoyed a slow roasted leg of lamb, sweet and fingerling potatoes and green beans.
For dessert, Pastry Chefs Dylan and Keira helped Archana create an Easter Basket cake. Dylan and Keira insisted on using an egg cracker to crack the eggs for the batter. This tool is a must have when baking with children.
We baked our favorite lemon cake in two 8-inch round pans. Our go-to recipe is Annie’s Eats Key Lime Pie Recipe (just swap lemon for the key limes and skip the graham cracker crust). After the cakes cooled, we used Toba Garret’s decorators’ buttercream icing plus fresh lemon juice to frost the cake. We used a basketweave tip to create the basket, a Wilton 1M tip to make a shell border and a grass tip to make grass. Then we add a chocolate bunny, chocolate eggs and jelly beans.
