I love Easter so much, it’s not even bunny. For our Easter brunch, we wanted to incorporate sweet and savory Easter food ideas. There are so many sweet options for Easter, but finding savory Easter food ideas can be tricky. We bought some bunny molds, made mashed potatoes and then transformed them into bunny potato croquettes. Most of the potato croquette recipe can prepared in advance, and then they can be air-fried after guests arrive. This recipe is kid and adult approved for Easter. Kids love the bunny shapes, but adults love the complex flavor profile.
Bunny Potato Croquettes: Gather the Ingredients

- Use a potato masher. You can also mash with a fork or an immersion blender. Don’t use a regular blender. A regular blender can make them gluey or gummy, which is the last thing you want for mashed potatoes.
- Don’t substitute bread crumbs with almond flour. We tried that for our first batch and it was a failure.
- If you don’t have an air-fryer, bake or pan-fry. Lots of ways to cook these potato croquettes. Try them all and decide which you like best.
- Use an offset spatula to fill the bunny molds. This is an easy way to remove the excess mixture or bread crumbs.
- Prepare the croquettes in advance. Refrigerate them until ready to air-fry.

Mashed Potatoes
- 5 medium Idaho Potatoes
- 1 Garlic Clove minced
- Sea Salt
- 3 TBSP Butter
- 1 /2 Cup Whole Milk
Croquettes
- 6 Oz Cream Cheese room temperature
- 2 Large Eggs beaten
- ½ cup Shredded Cheddar
- 3 tbs Parmesan
- ½ TSP Onion Powder
- 1 cup Almond Flour
- 3/4 cup Italian bread crumbs
- Oil Spray
Instructions
Peel and cut the potatoes Add to a pot with cold water that covers the potatoes (water line should sits 1 inch above the potatoes) Add the garlic and 1 TBSP salt and boil for 20 minutes or until a knife inserted in the middle of a potato goes in easily Carefully drain out all of the water In a small saucepan, heat the butter, milk and 1 TBSP salt Pan-dry the potatoes After draining the water, return the potatoes to the stove and turn the heat down to low and shake gently for about 1 minute to help cook off some of the remaining steam within the potatoes Mash the potatoes, preferably with a potato masher (but a fork, spoon or immersion blender can work too) Stir everything together Pour half of the melted butter and milk mixture over the potatoes, and fold it in with a spoon or spatula until potatoes have soaked up the liquid Repeat with the remaining butter Mix the potatoes and cream cheese together, then add eggs, cheeses and onion powder Add almond flour and mix Place bunny silicone mold on baking sheet and mist with cooking spray Coat the bottom of each mold with a half teaspoon of Italian breadcrumbs and shake to ensure full coverage Dollop the potato mixture into the molds Generously sprinkle bread crumbs over molds and pat down with spatula Mist tops with cooking spray Place in freezer for at least one hour Pop the bunny croquettes out of the molds Air-fry at 400 degrees for 15 minutes Serve with sour cream, parsley and herbed bunny butterEaster is the only time when it’s perfectly safe to put all your eggs in one basket.
