This is very a-peeling. This 10-ingredient protein banana bread recipe is simple and the Kitchen-Aid stand mixer does most of the work for you. The main ingredient is banana, of course. You want them to be ripe. The more ripe, the banana is, the more moist and sweet the banana bread. You can use your milk of choice- we use unsweetened almond milk. You’ll also need white vinegar, which reacts with the flour to help make the bread rise, and high quality vanilla extract for rich flavor.
Bake my day. Dry ingredients include brown rice flour, almond flour coconut palm sugar, almond flour and vanilla Iconic protein powder. The brown rice flour makes the recipe gluten free and the almond flour adds protein and gives the bread a nutty flavor. The last ingredient is chocolate chips- you can’t have too many chocolate chips.
Protein Banana Bread Recipe: Substitutions
- Brown Rice Flour: Substitute flour of choice (we also like rolled oats or oat flour). If you aren’t gluten-free, you can use all purpose flour.
- Almond Flour: Substitute flour of choice
- Vanilla Protein Powder: You can use any protein powder. Iconic is not vegan, so you can substitute with a vegan alternative if you are vegan. You can also use protein powder flavor of choice. You can use a chocolate protein powder to add a a chocolate flavor to the banana bread.
- Coconut Palm Sugar: Substitute with white sugar, honey, maple syrup, blue agave, monk fruit, Stevia or sweetener of choice.
- Nuts: Add walnuts on top or in the batter for a nutty flavor and crunch
- Glaze: Top the banana bread with a sugar or chocolate glaze
- Nut Butter: Top the banana bread with peanut, almond or nut butter of choice
- Chocolate Chips: Substitute with white chocolate chips, peanut butter chips, raisins, carob chips, Cacao nibs, butterscotch chips
Protein Banana Bread Recipe: Tips
Make you peel good. You want to use very ripe bananas. The riper, the better. But what if you have a banana bread craving, and your banana’s aren’t ripe enough. Just pop the bananas with the peel on and bake them at 300°F for 30 to 40 minutes, until deeply blacked. Make sure to line the loaf with parchment paper and loosely cover the bread with foil to prevent the top from burning. Also, allow the bread to cool before slicing into. If you want to make single serve muffins, use a mini ice cream scoop and bake in a mini muffin pan.
Protein Banana Bread Recipe: Instructions
I’m head of peels for you. Take your ripe bananas and mash them with a fork and add to your stand mixer. Then add the wet ingredients almond milk, vinegar, vanilla and mix. Then add brown rice flour, coconut palm sugar, almond flour, vanilla protein powder, salt and mix. Then fold chocolate chips into the batter. Make sure to save some chocolate chips to sprinkle on top. Then pour the batter into a loaf pan lined with parchment paper. Sprinkle remaining chocolate chips on the top and cover the loaf with foil. Ingredients
- 3 Medium Bananas
- 2/3 Cup of Almond Milk
- 1 Tbsp White Vinegar
- 1 Tsp Vanilla Extract
- 1/2 Tsp Salt
- 1 Cup of Brown Rice Flour
- 1/2 Cup Coconut Palm Sugar
- 1/2 Cup Almond Flour
- 1/2 Cup Vanilla Protein Powder
- 1/2 Cup Chocolate Chips
Instructions
- Mash bananas with a fork
- Add bananas to a stand mixer
- Add almond milk to stand mixer
- Add vinegar and vanilla and mix
- Then add brown rice flour, coconut palm sugar, almond flour, vanilla protein powder, salt and mix
- Then fold in chocolate chips (save some to sprinkle on top)
- Pour in loaf pan
- Sprinkle chocolate chips on the top
- Bake at 350°F for 1 hour (until a toothpick comes out clean)
